My Almost Perfect Thai Fried Rice

I’ve always been wondering how the Thais cook the their fried rice. Whichever restaurant or hawker shop you go in Thailand, you will surely impressed by their delicious fried rice. And guess what, now I know the secret on how they cook it. I’ve tried it the other day and true enough my fried rice tastes more delicious than my normal fried rice. So, let me tell you the secret of cooking the delicious Thai fried rice.

Tip number 1 : You have to fry the meat you want to mix with your fried rice and set aside. If you wish to add egg then, scramble the egg first and set aside.

Tip number 2: After frying the meat, leave a little bit of oil in the pan and pour in 2 tablespoons of soy sauce and 1 tablespoon of Fish sauce ( this proportion is good for 2 cups of rice). And only then you put in the cooked rice and mixing them very well.

Tip number 3: When cooking, you have to make sure that you fire is set on high fire. And yes, to avoid your rice from burning, you have to be quick in turning the rice over.

Tip number 4: And after putting the rice in the pan, only then you put in the other ingredients like thinly sliced tomatoes, onions and if you wish, other vegetables. Season with salt and white ground pepper and cook for a minute or 2 and serve it piping hot.

Here’s my almost authentic Thai fried rice, using our left over chicken the night before.
